Orange Almond Poppy Seed Cake

– 1 and 1/2 cups all-purpose flour

– 1/2 cup almond flour

– 1 tablespoon poppy seeds

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1 cup granulated sugar

– 3 large eggs, room temperature

– 1/2 cup unsalted butter, melted

– 1/2 cup sour cream, room temperature

– Zest of 1 orange

– 1/4 cup freshly squeezed orange juice

– 1 teaspoon vanilla extract

1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

2. In a medium bowl, whisk together the all-purpose flour, almond flour, poppy seeds, baking powder, baking soda, and salt.

3. In a large bowl, whisk together the granulated sugar and eggs until pale and creamy.

4. Add the melted butter, sour cream, orange zest, orange juice, and vanilla extract to the egg mixture and whisk until well combined.

5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
