One-Pot Mexican Beef and Rice

🍴 Ingredients:

1 lb ground beef

1 onion, chopped

1 bell pepper, chopped

1 packet taco seasoning

1 cup long-grain rice

1 can (10 oz) diced tomatoes and green chilies

1 can (15 oz) black beans, drained and rinsed

1 1/2 cups beef broth

1 cup frozen corn

1 cup shredded cheddar cheese

Fresh cilantro, chopped for garnish

Salt and pepper to taste

🥣 Instructions:

In a large skillet or pot, brown the ground beef over medium-high heat until fully cooked. Drain any excess fat.

Add the chopped onion and bell pepper to the pot with the beef and sauté until they are soft.
